Jollof Rice

  • 2 onions
  • 3 small cans tomato paste
  • 1 cup cooking oil
  • 3 cups parboiled rice (the white rice will soften before dish is ready)
  • 1 package frozen fresh mixed vegetables
  • 2 bullion cubes
  • 1 pig foot (optional) boiled till tender
  • seasoned salt; salt and black pepper/hot pepper to taste
  • 1/2 pound smoked pork or smoked salt beef
  • 1 lb beef (boiled till tender)
  • 1 chicken , broiler or layer

Cut up chicken; beef; smoked pork and pigfoot, Season chicken and beef and fry. Next; fry onions n hot peppers. Add meat; poik; pigfoot and tomato paste and stir well in oil. Add chicken if layer at this point., if broiler, keep aside for now. pour in water to cook the rice. Season; cover. Bring to boil and cook over low heat for 10_15 min. Add vegetables, then rice. As soon as mixture starts to boil; stir and reduce flame to low and cook slowly, stirring occasionally. Your rice should be loose and fluffy not soggy. Add chicken if broiler. Cook for another 5 minutes and serve hot.
